Strawberry-Banana sMoOtHiEs!

(makes 4 -6 med. sized cup servings)

  • 4 cups frozen (or fresh) strawberries
  • 2 ripe(brown spots) bananas cut up
  • 2 cups milk(taste best with whole milk)
  • 31/2 cups vanilla yogurt (taste best with whole milk yogurt)

1. Put all ingredients into your blender, and blend on high until smooth.

This is a healthy and yummy drink for a hot day. Remember to Rock On!!

Shrimp Scampi and Angel Hair Pasta

(makes 8 servings)

  • 2 pounds angel hair past
  • 5 cloves of garlic
  • 4 tbs olive oil (evoo) (2 turns of the pan)
  • 6 tbs butter
  • 2 pounds shrimp (any kind)
  • a pinch of salt and pepper
  • 2 cups chicken stock
  • a med. sized bunch of chives (snipped with scissors)
  • a handful of fresh parsley (snipped with scissors) (about 2 tbs)

1. Put a large pot of water over high heat and bring to a boil; add salt. Cook pasta according to package directions.

2. Meanwhile, peel and smash garlish with knife with some salt (to keep all the juice).

3. Heat a large skillet over medium heat. add evoo (oil) and butter. When butter has melted into oil, add crushed garlic and cook 2 minutes.

4. Add shrimp, salt and pepper. Cook shrimp until heated and turn pink (2-3 minutes)

5. Add stock, bring to a boil. (OTHER POT) when pasta’s cooked: drain and add to other pot.

6. Toss everything together add spices to own taste (I like to add crushed hot peppers) and Whala!

This recipie is super easy and super yummy!!

* Rugby *

All my siblings and I play or have played rugby, and we are members of the local rugby club. Our family has produced 3 National team players; 1 of whom has had the honour of receiving the title of “Player of the year” twice.WHOOT! WHOOT!! Swimming lessons.

I’m a Red Cross Certified Swim Instructor.Today I taught swimming from 2:30-5:00 P.M. I filled in for another instructor and  taught Bibs and Bubbles (infants with Parent) and Aqua tots A Aqua Tots B, a mixed group of kids (most of them I’d place in level 2). I had a lot of fun, and I got to give individual attention to this one little girl that kept saying “I blow big bubbles” she was so cute!   Swimming is a great after school activity, it keeps you entertained and teaches you how to be safe in water. Teaching swimming is a great job if you like kids and like to play games, sing songs and make lots of bubbles! Click HERE to find out more about Red Cross Swimming

Eagle Eye

This is a fabulous action movie. I went to see this about 2 weeks ago, and I loved it! It’s full of action, it’s funny, and it has Shia LaBeouf in it (what else could you want?!) I don’t recall any swearing, though there might be. This is a really cool movie that anyone over 13 would probably really enjoy it. Eagle Eye Review

One Fine Day

One fine day in the middle of the night,

two dead men got up to fight.

One blind man to see fair play,

two dumb men to shout hurrah.

A paralyzed donkey walking by,

kicked the blind man in his eye,

kicked him through a nine-inch wall,

into a dry ditch, which drowned them all.

(In honour of my Grandfather who helped me memorize this poem.)

Coconut Cream Pie


(for 2 pies)

Ingredients:

  • 6 egg whites
  • 6 cups of milk
  • 11/3 cup of sugar
  • 1teaspoon of salt
  • 2 tablespoon of butter
  • 10 tablespoons of cornstarch
  • 2 half teaspoons of vanilla
  • 4 tablespoons of coconut rum
  • 2 cup of fresh shredded coconut
  • 4 tablespoons of toasted coconut
  • -whipped cream

Directions:

In a saucepan combine, the cornstarch, with
the sugar, milk and salt to taste. Cook over
medium heat. Stir constantly till the mixture
thickens and boils.

Boil for about 11/2 minute. Gradually stir 1 cup
of the hot mixture into the slightly beaten
yolks and blend into the remaining mixture
in the saucepan.

Next boil for 11/2minute stirring constantly.
Remove from heat then add butter, vanilla,
coconut rum and shredded coconut Pour into
the baked pie shells and chill.

Now top with the whipped cream then sprinkle
with toasted coconut. May also be made with
graham cracker crusts.

Sports Person of the Week – Paul Westin

Paul Westin

Born in Manitoba, Canada and a Caymanian by his grandmother, Margaret Webster, Paul Westin is the son of Peter and Loretta Westin. He has lived in Cayman for seven years with five brothers and two sisters.

A product of home schooling, he says, “Algebra is my favourite subject, (and) I like that I get to travel, because I can do my schoolwork anywhere.”

Westin played football for St. Ignatius until this year, “but now my rugby practices are on the same days. I also play baseball. Last year, we were football League Champions and Cup runners up. I played baseball in July on a travelling under-14 Cayman team at a tournament in Orlando.”

Although a true athlete of many sports, he says, “rugby is very important to me. I am hoping to get good enough to make the national team. My favourite position is outside centre because it’s right in the action.”

He adds: “I mostly watch World Cup‚  football (soccer) and NHL hockey on TV. My favorite hockey team is the Montreal Canadiens. I guess if I was in Canada I’d be playing hockey, too.”
